Tasty, Crunchy, and Fermented: The No-Nonsense Guide to Radishes

Who doesn't love a finger-lickin' good spring veggie? Although often mistaken for a lesser cousin to carrots, radishes pack a nutritious punch! But what do you do when the rotund radish bundle arrives at your doorstep, and ideas for cooking it fade faster than your morning cup o' joe? Lacto-fermentation, baby! Here's the skinny on turning your ordinary radishes into an extraordinary, tangy condiment!

Lacto-fermentation gives a new life to your radishes, making them more than just a pretty garnish. Bye-bye spiciness and hello flavor! This no-nonsense process can even turn your radishes into a year-round delight.

While you're free to select your preferred radish shade (red, white, purple, or even watermelon), make sure they're firm and crunchy at the market. They'll retain their texture after the fermentation process.

Crunchy, Tangy Fermented Radishes Recipe

Equipment:* 500ml glass jar with lid* Glass weight* Mandolin (or chef's knife)* Vegetable masher (optional)

Ingredients:* 2 bunches of radishes (about 400g)* 10g salt* 5ml mustard seeds (optional)* Filtered or chlorine-free water

Steps:1. Wash the radishes roughly and chop off the ends.2. Slice the radishes with a mandolin to obtain very thin strips. Watch your digits! (Radishes are red enough already).3. Add the salt and mustard seeds to the jar. Add the radish slices on top, pressing them down with your hands or with a fermentation pestle.4. Add water so that the radishes are well covered. Squeeze with the pestle to remove the bubbles.5. Place a weight or ViscoDisc on top of the radish slices to prevent any contact with the air.6. Close the lid tightly. If you’re using a lid with an airlock, fill the airlock with water up to the line.7. Let it ferment for 7 to 15 days at room temperature.8. When you’re satisfied with the taste, put them in the fridge.

Tips:- Feel free to experiment with spices or herbs like curry, garlic, or dill to give your radishes an extra kick.- Combine radishes with other vegetables like leeks or cabbage for a new texture and flavor profile.
